Crisp lightly breaded Halibut with Vegetable Relish |

Ingredients: |

| 2 lb halibut fillet 1 red bell pepper diced 1 ˝ cup extra virgin olive oil 1 tablespoon fresh Italian parley 1 teaspoon capers 2 lb fresh spinach |
1 yellow bell pepper diced 1 celery stalk diced 1 cup homemade breadcrumbs 2 teaspoon lime juice 1 carrot, peeled and diced Salt and pepper as needed |

Serves 4 Approximate preparation time 1/2 hour.
4. Heat the last ˝ cup olive oil in a large sauté pan. Add the spinach with salt and pepper as needed.
