Crisp lightly breaded Halibut with Vegetable Relish

Ingredients:

2 lb halibut fillet

1 red bell pepper diced

1 ˝  cup extra virgin olive oil

1 tablespoon fresh Italian parley

1 teaspoon capers

2 lb fresh spinach

1 yellow bell pepper diced

1 celery stalk diced

1 cup homemade breadcrumbs

2 teaspoon lime juice

1 carrot, peeled and diced

Salt and pepper as needed

Serves 4

Approximate preparation time 1/2 hour.

  1. Preheat oven to 350°F

  2. Halibut: Heat the ˝ cup olive oil in a large sauté pan over medium high heat. While the oil gets hot. Using a large bowl combine breadcrumbs and halibut fillet. Place fillet in the pan until light golden. Remove pan from heat and transfer to the oven about 5 minutes.

  3. Relish: Using a medium bowl mix all of the diced vegetables, add lime juice, parsley, capers, ˝ cup olive oil and adjust the seasoning with salt and pepper to taste.

       4.   Heat the last ˝ cup olive oil in a large sauté pan. Add the spinach with salt and pepper as needed.
